Ingredients

  • 3 pounds boneless skinless chicken thighs
  • 3/4 cup sugar
  • 3/4 cup reduced-sodium soy sauce
  • 1/3 cup cider vinegar
  • 1 garlic clove, minced
  • 3/4 teaspoon ground ginger
  • 1/4 teaspoon pepper
  • 1 cup Thai peanut sauce
  • 2 prebaked 12-inch pizza crusts
  • 2 cups coleslaw mix
  • 2 cups shredded part-skim mozzarella cheese
  • 4 green onions, thinly sliced
  • 1/2 cup chopped salted peanuts
  • 1/4 cup minced fresh cilantro

Directions

  1. Place chicken in a 4- or 5-qt. slow cooker. In a small bowl, mix sugar, soy sauce, vinegar, garlic, ginger and pepper; pour over chicken. Cook, covered, on low 4-5 hours or until chicken is tender.
  2. Preheat oven to 450°. Remove chicken from slow cooker; discard cooking juices. Shred chicken with 2 forks; transfer to large bowl. Add peanut sauce; toss to coat.
  3. Place crusts on 2 ungreased 12-in. pizza pans or baking sheets. Spoon chicken mixture over crusts; top with coleslaw mix and cheese. Bake 10-12 minutes or until cheese is melted. Sprinkle with green onions, peanuts and cilantro.

Can you make your own Thai peanut sauce for the pizza?

You can find Thai peanut sauce (also known as satay) at the grocery store, but you can also make your own. Similar to this one for Thai chicken peanut noodles, make the sauce with creamy peanut butter, soy sauce, lemon juice and Sriracha. Some peanut sauce recipes also contain coconut milk, chili garlic sauce, fish sauce, tamarind paste, garlic, ginger and various spices.

Can you use homemade pizza dough to make Thai chicken pizza?

Pre-baked pizza crusts are convenient, but you can make your own pizza dough if you have time. Pizza dough is a simple combination of flour, water and yeast. Some recipes also contain sugar and oil. You’ll want to plan ahead if you’re going this route, as pizza dough needs to rise for at least 30 minutes and sometimes requires an overnight ferment in the refrigerator.

The easiest way to store leftover Thai chicken pizza is with aluminum foil. Position the slice(s) in the middle of the foil and tightly wrap it up into a neat package. Store the packet in the refrigerator for up to 4 days.

How should you reheat leftover Thai chicken pizza?

We like to reheat pizza in a 375° oven. Preheat a baking tray lined with aluminum foil, add the pizza when it’s hot, and bake for 10 minutes until warmed through. Alternatively, you can reheat the slices in a nonstick skillet with a few drops of water. Add the lid to the pan, trapping the steam inside to re-melt the cheese.
