Ingredients

  • 2 cups shredded peeled tart apples
  • 2 cups shredded peeled pears
  • 2 cups sugar
  • 1-1/4 cups canola oil
  • 1 cup raisins
  • 1 cup chopped pecans
  • 2 large eggs, lightly beaten
  • 1 teaspoon vanilla extract
  • 3 cups all-purpose flour
  • 2 teaspoons baking soda
  • 2 teaspoons ground cinnamon
  • 1/2 teaspoon ground nutmeg
  • 1/2 teaspoon salt
  • CREAM CHEESE FROSTING:
  • 3 ounces cream cheese, softened
  • 3 cups confectioners' sugar
  • 1/4 cup butter, softened
  • 2 tablespoons 2% milk
  • 1/2 teaspoon vanilla extract

Directions

  1. In a large bowl, combine the first 8 ingredients. Combine dry ingredients; stir into the fruit mixture.
  2. Pour into a greased 13x9-in. baking pan. Bake at 325° until a toothpick inserted in the center comes out clean, about 1 hour. Cool completely on a wire rack.
  3. For frosting, in a large bowl, beat the cream cheese, confectioners' sugar and butter until smooth. Beat in the milk and vanilla; frost cake. Store in the refrigerator.
