Ingredients

  • 2/3 cup white baking chips
  • 1/2 cup butter, cubed
  • 1 cup confectioners' sugar
  • 2 large eggs, room temperature
  • 2 large egg yolks, room temperature
  • 1 teaspoon vanilla extract
  • 6 tablespoons all-purpose flour
  • 10 fresh raspberries

Directions

  1. Preheat oven to 425°. In a microwave-safe bowl, melt baking chips and butter for 30 seconds; stir until smooth. Whisk in confectioners' sugar, eggs, egg yolks and vanilla until blended. Fold in flour.
  2. Transfer to 5 generously greased 4-oz. ramekins; press 2 raspberries into center of each ramekin. Bake on a baking sheet until a thermometer reads 160° and edges of cakes are set, 14-16 minutes.
  3. Remove from oven; let stand 10 minutes. Run a knife around sides of ramekins; invert onto dessert plates. Serve immediately. If desired, garnish with additional raspberries.

Ina Garten is known as the go-to source for homestyle recipes. If you’re hosting a party or simply looking for something delicious for dinner, the Barefoot Contessa has you covered. I’m a huge fan of her flavorful apple crisp and absolutely love her coconut cake recipe. And at the base of both of these great desserts? Unsalted butter.

What butter does Ina Garten use?

In the Ask Ina section of the Barefoot Contessa website, a fan asked what brand of butter is her go-to. Cabot unsalted butter was her top choice! Cabot Creamery has been operating in Cabot, Vermont since 1919, making cheese, yogurt, sour cream and, of course, plenty of butter. But it’s not just Ina’s top choice. The creamery’s unsalted butter won 1st place in its category at both the 2022 and 2023 America Cheese Society competition, along with 1st Place at the 2022 World Dairy Expo Championship. I’m a huge fan of the creamery’s extra sharp cheddar cheese, and I have used Cabot unsalted butter in baking several times as well, when I can get my hands on it on the West Coast.

While this brand of butter is clearly top-notch, Ina does say there are many other good brands of butter you could use. But the key is to select unsalted butter for recipes, especially in baking.

Why use unsalted butter in baking?

Unsalted butter doesn’t contain salt. While many baking recipes call for half of a teaspoon or even a full teaspoon of salt, those measurements are very intentional. After all, baking is a science and recipes rely on precise ingredients and specific methods to create a certain result.

In baking, salt works to balance sweetness within a recipe. It certainly doesn’t make it salty. Instead, salt enhances the flavor of a cake, cookies or quick breads, even with just a small pinch. Salt also plays a role in creating the perfect texture of many baked goods. It binds to the proteins in flour, ultimately strengthening a dough.

Because every creamery is different, salted butters contain varying amounts of salt. There is no set standard across the board for each brand. If you use salted butter instead of unsalted butter, you’re not able to precisely control the amount of salt going into your recipe. If you know how much salt is in each stick of salted butter, it is possible to adjust for it. However, it’s much easier to start with unsalted butter from the beginning, like Ina does, for better control.

Homemade cinnamon rolls are the perfect treat whether you’re hosting a weekend brunch or cozying up at home on a Sunday morning. And while cinnamon and sugar certainly shine on their own, the addition of fruit can take cinnamon rolls to a whole new level.

This recipe for blueberry cinnamon rolls embraces the art of classic cinnamon rolls while also infusing fresh blueberries to add great flavor and to make the color of these cinnamon rolls pop. A from-scratch dough is filled with homemade blueberry jam, baked and then topped with a dreamy blueberry cream cheese frosting. They’re naturally a vibrant purple hue, making them sure to stand out on any serving table. Be sure to touch up on these cinnamon roll tips before getting started!

Blueberry Cinnamon Rolls Recipe

Ingredients Blueberry Cinnamon Rolls Molly Allen For Toh

  • 1 cup warm milk
  • 3 tablespoons sugar
  • 1 package active dry yeast
  • 1 egg
  • 4 tablespoons butter, softened
  • 1 teaspoon salt
  • 3-2/3 cups flour

Filling:

  • 1/3 cup white sugar
  • 1/2 tablespoon cinnamon
  • 4 tablespoons butter, softened

Blueberry Jam:

  • 2 cups fresh blueberries
  • 1/4 cup sugar
  • 1 tablespoon water
  • 1/2 teaspoon cinnamon
  • 1-1/2 tablespoons cornstarch

Frosting:

  • 1 (8-ounce) brick cream cheese, softened
  • 2 tablespoons butter, softened
  • 1/4 cup blueberry jam
  • 1 cup confectioners’ sugar

Directions

Step 1: Activate the yeast

In the bowl of a stand mixer fitted with the dough hook, add the warm milk and sugar. Sprinkle the yeast on top and let sit to activate, five to 10 minutes, until foamy.

Turn the speed on the mixer up to medium and gradually mix in the flour, egg, butter and salt. Mix until the dough comes together and pulls away from the sides of the bowl. Transfer the dough to a greased bowl, cover and let rise for one and a half hours.

While the dough is rising, make the blueberry filling. In a saucepan, combine the blueberries, sugar, water and cinnamon. Once the dough has risen, transfer it to a floured surface. Use a rolling pin to roll the dough out into a rectangle 1/4-inch thick. Spread the butter over the dough with a spatula and sprinkle with the cinnamon-sugar mixture. Spread the blueberry jam over top, reserving 1/4 cup for the frosting.

Step 5: Cut and let the rolls rise

Starting with one of the long ends, tightly roll the dough up to form a log. Cut the log into eight even pieces. Place the rolls in a greased 13×9-inch baking dish. Cover the baking dish with a towel and allow the rolls to rise for an additional 45 minutes. Preheat the oven to 350°F.

Tips for Making Blueberry Cinnamon Rolls

Can you use frozen blueberries for the filling?

While this recipe is made using fresh blueberries, they can easily be swapped for frozen blueberries. However, using frozen blueberries may have a higher moisture content, requiring additional cooking time.

Can blueberry cinnamon rolls be made ahead?

It’s best to make the dough and bake the cinnamon rolls fresh. However, these cinnamon rolls can be made ahead of time if desired. Roll out the dough, add the filling and form the rolls. Keep them covered with plastic wrap in the greased baking dish overnight in the fridge. Once you’re ready to bake, remove the cinnamon rolls from the fridge to come up to room temperature and bake as normal.

How to store blueberry cinnamon rolls

These blueberry cinnamon rolls are best eaten fresh. If you have leftovers, store them in an airtight container in the fridge for up to four days.

  • 2 teaspoons royal blue food coloring
  • 1-2 drops violet food coloring

  • 1 teaspoon baking soda
  • 1/2 teaspoon baking powder
  • 1-1/2 tablespoons cocoa powder
  • 1/2 teaspoon salt
  • 1-1/3 cups buttermilk, room temperature
  • 1 tablespoon white vinegar

Frosting:

  • 2 (8-ounce) packages cream cheese, softened
  • 1/2 cup butter, softened
  • 6 cups powdered sugar
  • 2 tablespoons milk
  • 1 teaspoon vanilla extract

Directions

Step 1: Cream the butter and sugar

 using a hand mixer to make frosting

Preheat the oven to 350°F. In another small bowl, combine the buttermilk and vinegar and set aside. Grease two 8-in. round cake pans. In the bowl of a stand mixer fitted with the paddle attachment, or a mixing bowl with a hand mixer, cream the softened butter and sugar until light and fluffy, about five minutes. Mix in the eggs and mix in the vanilla extract.

Step 2: Add the food coloring

Mix in the blue food coloring, along with the violet food coloring. Mix thoroughly to incorporate the color, and adjust as needed.

Step 3: Add the dry ingredients

In a small bowl, whisk the dry ingredients to combine. Gradually mix the dry ingredients into the butter mixture, alternating with the buttermilk. Mix until just combined. Add additional food coloring if necessary.

Step 4: Bake the cakes

Divide the batter evenly between the two prepared cake pans. Bake the cakes for 24 to 26 minutes until they’re set and a toothpick inserted into the center comes out clean. Once baked, remove the cakes from the oven and set them aside to fully cool.

Step 5: Make the cream cheese frosting

In a mixing bowl, cream together the cream cheese and butter. Mix in two cups of powdered sugar, milk and vanilla extract. Gradually mix in the remaining powdered sugar until the mixture comes together. Turn the speed up on the mixer to whip the frosting until smooth.

Place one cake layer on a cake stand. Top the layer with a generous amount of frosting, and place the second cake layer on top. Frost the exterior of the cake using a piping bag or offset spatula.

Why is my blue velvet cake green?

It’s possible that your batter with have a green tint to it, and that’s all because of the reaction with the yellow from the egg yolks. The key to offsetting that green-turquoise color is to add a drop or two of violet food coloring to balance it out.

What makes it a velvet cake?

The term velvet cake is all about texture. The addition of cocoa powder plays a role in that texture when it’s introduced to acidic ingredients such as vinegar, buttermilk and baking soda. This cake utilizes all three of those acidic ingredients to produce a smooth, velvet-like texture.

Do I have to use ermine frosting?

Ermine frosting is an old-fashioned option that utilizes a base of cooked and thickened milk, flour, sugar and salt. That base is then beaten with butter to create a stiff frosting. Red velvet cakes used to most often be topped with this type of frosting, but cream cheese frosting has become a more popular choice due to its sweet, yet tangy, flavor. You can certainly choose to top this cake with ermine frosting, or choose to stick with cream cheese frosting.

  • FILLING:
  • 1/2 cup seedless strawberry jam
  • 1 tablespoon cornstarch
  • 1/4 teaspoon vanilla extract
  • 1 large egg
  • FROSTING:
  • 1-1/4 cups confectioners' sugar
  • 2 tablespoons 2% milk
  • Nonpareils, optional

Directions

  1. Place flour, sugar and salt in a food processor; pulse until blended. Add butter; pulse until butter is the size of peas. In a small bowl, whisk egg, 2 tablespoons milk and vanilla. While pulsing, add egg mixture to form moist crumbs. If needed, add more of the remaining milk, 1 teaspoon at a time, to form moist crumbs. Divide dough in half. Shape each into a disk; wrap and refrigerate 1 hour or overnight.
  2. For the filling, in a small bowl, combine jam, cornstarch and vanilla extract.
  3. Preheat oven to 375°. On a lightly floured surface, roll half the dough into a 12x8-in. rectangle. Cut into eight 4x3-in. rectangles. Transfer to a parchment-lined baking sheet. Whisk egg; brush over rectangles all the way to edges. Spoon about 1 tablespoon filling over each pastry to within 1/2 in. of edges. Roll remaining dough into a 12x8-in. rectangle; cut into eight 4x3-in. rectangles and place over filling. Press edges with a fork to seal.
  4. Bake until edges are golden brown and filling is bubbly, 15-18 minutes. Remove from baking sheet to a wire rack to cool. For frosting, mix confectioners’ sugar and milk until smooth. Spread on pastries. If desired, sprinkle with nonpareils. Let stand until set.

Cut a small hole in the corner of a food-safe plastic bag; fill with batter. Pipe into a greased 6-cavity doughnut pan, filling cavities two-thirds full.
  2. Bake until a toothpick inserted in the center comes out clean, 10-12 minutes. Cool for 5 minutes before removing from pans to wire racks to cool completely.

After all, different sugars yield different tastes and textures in baking. So, I tried both to compare.

I preferred replacing the tablespoon or so of honey per pastry with brown sugar. The sugar caramelized better in the oven and blended into the flavors of the pineapple more easily. Cottage cheese bread may seem odd, but it follows some of the same principles of other dairy-based bread such as brioche or milk bread. As an added bonus, each slice has about 15 grams of protein. It’s a perfect sandwich bread and a high-protein option!

How To Make Cottage Cheese Bread

This bread is so easy to make. I’m not very experienced at bread baking and Gelen’s recipe came out great.

Ingredients

  • 1 1/2 teaspoons active dry yeast
  • 1/3 cup lukewarm water
  • 1 cup egg whites (from 7 to 8 medium eggs)
  • 1 cup cottage cheese
  • 4 2/3 cups bread flour, plus more for dusting
  • 1 tablespoon kosher salt

Directions

Step 1: Activate, blend, and whisk

In a mixing bowl, combine the active dry yeast and lukewarm water and set aside. In a food processor or blender, whizz the egg whites and cottage cheese, blending until smooth. When the yeast mixture is hydrated (and cloudy), add the egg-white-cottage cheese mixture and whisk to combine.

Step 2: Combine dry and wet ingredients

Whisk the dry flour to remove any lumps and aerate. Add the flour and salt to the wet mixture. Whisk to combine. You will be left with a rough, sticky dough.

Step 3: A need for kneading

Dust a work surface with flour and place the dough on it, and dust your hands as well to prevent the dough from sticking to them. Knead the dough for about 5 minutes until it starts looking smooth. Use a scraper to help lift the sticky dough from your work surface and continue kneading. Shape it into a ball and place it in a mixing bowl. Cover and proof the dough in a warm spot for an hour, until almost doubled in size.

Step 4: Punch down and pan

Line a 10×4-inch loaf pan with parchment paper. Punch down the dough to deflate. Roll it into a log and stitch the ends by pinching them together. Proof the bread in the loaf pan for 20 to 25 minutes, until it looks risen and puffed up. After the final proofing of the dough, make a slit in the middle using a sharp knife or razor blade.

Preheat the oven to 400°F. Bake in the oven for 40 to 45 minutes. You can tell the bread is done baking when it sounds hollow after a gentle tap on the crust. Cool completely, then slice and serve.

Tips for Making Cottage Cheese Bread

  • Try to weigh the flour, if you can, rather than going by cup measurements. The weight of flour in this recipe comes out to approximately 582 g.
  • Use the right pan. Gelen uses a 10×4-inch loaf pan, but if you don’t have a pan with those exact measurements, use a larger one, such as a 10×5-inch loaf pan, or simply divide the dough into 2 halves and make 2 loaves of bread. A standard 9×5-inch loaf pan won’t work because the dough will ooze out on the sides. You can also bake the dough directly on a baking sheet—it won’t be as tall as sandwich bread, but it will still work.
  • The bread will brown on the top quickly. If necessary, cover the top loosely with aluminum foil when it turns crusty and brown to prevent it from burning.

  • Melted butter: Using melted butter helps create a cookie dough that spreads. Cookies that spread and flatten out will be thinner and crisper—something like a Tate’s Bake Shop cookie (one of our Test Kitchen’s favorite store-bought cookie brands).
  • Don’t chill the dough: Chilling dough firms up the butter and prevents cookies from spreading—two things that won’t give you a crispy chocolate chipper.
  • No brown sugar: That’s right. You can skip brown sugar when creating cookies with crunch factor. Brown sugar contains significant moisture thanks to the molasses. Skip it and use only granulated sugar to create crispy chocolate chip cookies.
  • Baking soda only: Baking powder gives cookies a cake-like texture. To avoid that softness, skip it and use baking soda only.

Ingredients

  • 1 cup butter, melted and cooled slightly
  • 1-1/2 cups sugar
  • 2 eggs
  • 1 teaspoon vanilla extract
  • 2-1/4 cups all-purpose flour
  • 1 teaspoon baking soda
  • 1/4 teaspoon salt
  • 2 cups chocolate chips

Yield: 48 cookies

Directions

Step 1: Cream ingredients

As with any chocolate chip cookie recipe, start by creaming together butter and sugar in the bowl of a stand mixer until light and fluffy. This process should take about 5 minutes. Don’t rush this part!

Next, add in the eggs and vanilla and beat well—another minute or so should do it.

Step 2: Add dry ingredients

Then add in the remaining dry ingredients—flour, baking soda and salt. Beat until just combined. Overmixing cookie dough will cause the cookies to become tough—not crispy.

The finishing touch for the cookie dough is stirring in the chocolate chips. You can use any chips you like—milk, dark, white—but semisweet is the traditional mix-in for chocolate chip cookies. Step 3: Bake

All that’s left is to bake these cookies off. Scoop tablespoons of dough onto baking sheets lined with parchment paper. You can use a spoon or cookie scoop for this job.

Bake at 325°F for 11 to 14 minutes or until the edges have started to brown. Remove the cookies from the oven and allow them to cool fully on wire racks before storing them.

How We Tested Wildgrain

To put Wildgrain to the test, we ordered a one-month subscription to the Wildgrain Bakery Box. The box arrived with items still frozen. It came with three loaves of sourdough bread, packages of English muffins, brioche buns and croissants, and a small tray of brownies. (Keep in mind that each box is different, so next month’s will have a different selection.) I put all of the items in my freezer at home until I was ready to bake and eat them. The instructions for baking are on the back of each package. I assessed the products based on convenience and flavor.

Baking the breads was very simple, and I loved that there was no thawing required. They went straight into the oven, and once done, each loaf had a lovely crunchy crust and a tender, soft center. The flavor of each bread was incredible, but the cranberry pecan bread, in particular, was a favorite.

The brownies were quick and easy to bake when I needed my chocolate fix. They were gooey as can be and packed full of flavor. They had the ideal combo: crusty edges and a soft center.

The English muffins were dense but had such a wonderful flavor. I paired them with butter and jam for a delicious breakfast. The brioche buns were on the drier side and crackly on top, but the sweet flavor was absolutely delicious. I loved utilizing them for sandwiches.

Although all the contents of the Wildgrain Bakery Box were easy to bake and absolutely delicious, it was the croissants that stole the show. I could hardly believe that croissants from the freezer could produce such a beautifully golden final product. They were buttery and flavorful with the perfect balance of flakiness and tenderness.

Ingredients

  • 1 package (1/4 ounce) active dry yeast
  • 1-1/4 cups warm 2% milk (110° to 115°)
  • 2-1/2 cups bread flour
  • 1/3 cup butter, melted
  • 2 tablespoons sugar
  • 1 large egg, room temperature
  • 3/4 teaspoon salt
  • 2 to 2-1/2 cups all-purpose flour
  • TOPPING:
  • 1/4 cup sugar
  • 2 teaspoons pumpkin pie spice, apple pie spice or ground cinnamon
  • 1/4 cup butter, melted

Directions

  1. In a large bowl, dissolve yeast in warm milk. Add bread flour, butter, sugar, egg and salt. Beat on medium speed for 3 minutes. Stir in enough all-purpose flour to form a firm dough.
  2. Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
  3. In a pie plate, combine sugar and pie spice. Pour melted butter into another pie plate. Punch dough down. Turn onto a lightly floured surface. Shape into a loaf. Using a sharp knife, make 4 very deep slits straight across bread dough (without cutting all the way through the loaf). Roll dough in butter, massaging butter onto all surfaces until dough is thoroughly coated. Roll dough in sugar mixture, firmly pressing mixture onto dough. Place dough in a parchment-lined 9x5-in. loaf pan. Cover and let rise in a warm place until doubled, about 30 minutes. Meanwhile, preheat oven to 350°.
  4. Bake until golden brown, 30-40 minutes. (Cover loosely with foil if top browns too quickly.) Cool 10 minutes before removing from pan to a wire rack. Serve warm.

How can you make graduation cupcakes your own?

Adjust the colors to match the school colors of the graduate! You can add food coloring to the cake batter or the frosting, and pick matching M&M's for the "button" on top of the graduation cap. Color-coordinated cupcake liners would be super cute, too. Of course, you can also choose to make a different kind of batter or flavored frosting, if the flavor matters more to you than the colors. Just make sure you leave the graduation cap on top, with the tassel on the left (vs. the right) to show that they've graduated!

How should you store graduation cupcakes?

Since both the cake and the frosting have dairy, it's necessary to keep leftover frosted graduation cupcakes in the fridge. However, the graduation caps are better stored at room temperature, so consider removing those beforehand. You can always put them back on top of each cupcake before you serve leftovers. Try to eat them in 3 to 4 days, if they're not all gone before the end of the party.

Can you make graduation cupcakes in advance?

If you want to work ahead, you can bake the cupcakes and freeze them, unfrosted, for up to 2 months. Pull them out of the freezer and thaw the cupcakes at room temperature before you frost them. I was in graduate school living across the country from my family doctor when I learned I couldn’t eat gluten. The nurse delivered the news somberly over the phone.

“What’s gluten?” I asked.

I honestly didn’t have the slightest idea of what gluten-free meant, let alone how to adapt to a gluten-free diet, grocery shop or eat at restaurants. I couldn’t even fathom gluten-free baking.

In the decade-plus since, I’ve become an accidental expert. It started with homemade gluten-free cookies, because I couldn’t afford a $9 store-bought box on a student budget. Then I learned to make pizza dough, because I’ve always loved homemade pizza. Fast-forward five years, and I was raising two sourdough starters (one sorghum and one teff, if you’re curious) and baking bread every weekend.

Gluten-free baking is different than traditional baking, but it’s not inherently worse. With practice, you can bake just about anything you used to make with wheat flour, and often have a lot more fun experimenting with different flavors and flours. Here’s everything you need to know.

What Is Gluten?

While almost everyone has heard of “gluten-free” by now, the actual definition of gluten is a bit hazier. Is it wheat? Is it flour? It’s neither! Gluten is actually a protein found in wheat, barley and rye, both in whole grain and processed form (like flour). Gluten is strong; it lends structural support to breads and other baked goods, and contributes to most of the chew in breads, bagels and buns. Unfortunately, gluten can be difficult to digest for some people—and in the case of those with celiac disease, it can actively cause harm.

What Does ‘Certified GF’ Mean?

Most foods are naturally gluten-free. This includes the obvious (meat, poultry, eggs, fruits and vegetables), as well as the specality grains that have become more common with the rise of gluten-free diets (think millet, sorghum, rice and buckwheat).

However, depending on how a food is grown, harvested and processed, even a naturally gluten-free food may be exposed to gluten-containing ingredients. This is called cross contamination. For example, oats might be transported alongside wheat, buckwheat may be milled on the same equipment as wheat flour or a plain chocolate bar may be packaged using the same machinery as cookies. Likewise, foods and supplements whose ingredients are more obscure, such as vitamins, might contain hidden sources of gluten.

This is where certification is important. A product that’s “certified gluten-free” is both free of gluten and has not been contaminated with gluten. It’s officially tested and certified as gluten-free, meeting strict standards. Certified foods are safe for sensitive eaters, such as those with celiac disease.

In general, you’ll see “certified gluten-free” labels on processed foods, such as baked goods, cereals, flours, baking ingredients, snacks, canned foods and condiments like salad dressings. Foods that aren’t labeled as certified gluten-free may still be gluten-free, but not officially tested. Depending on personal gluten sensitivities, you may eat them anyway or choose to avoid them.

What Baking Ingredients Contain Gluten?

It’s not always easy to tell whether a food contains gluten. Some ingredients are obvious. For instance, I can buy vital wheat gluten in the bulk bins at my co-op grocery. Others are sneaky sources of gluten. Here are some common gluten suspects:

Naturally Contains Gluten

  • Wheat flour, including all-purpose, whole grain, cake flour and self-rising flour
  • Ancient grain forms of wheat flour, including einkorn, emmer, durum and spelt
  • Rye and pumpernickel
  • Barley

Often Contains Gluten

  • Cake and pudding mixes
  • Malt powder and malted milk
  • Sprinkles and candies (often contain sneaky hidden gluten)
  • Brown rice syrups may contain barley

Often Cross-Contaminated

  • Grains and starches that aren’t specifically certified gluten-free, including rice flour, potato starch, buckwheat, amaranth, teff and quinoa
  • Oats or oat flour that isn’t certified gluten-free
  • Corn flour, corn meal and corn starch
  • Spices
  • Chocolate (chocolate chips and cocoa powder may be processed with wheat)
  • Nuts, both whole and ground
  • Confectioners’ sugar
  • Baking powder
  • Vanilla and other extracts
  • Anything in a bulk bin is at high risk of being cross-contaminated

One final major suspect? Wooden cooking utensils and cutting boards that have been in contact with gluten ingredients. If you cook both gluten and gluten-free in your kitchen, make sure to have separate tools for gluten-free baking, preferably silicone or plastic.

How to Make Recipes Gluten-Free

When transitioning to a gluten-free diet, the most common worry is whether you’ll ever eat your favorite foods again. The good news is that most recipes can be converted to gluten-free. It’s often easy to find a substitute that will serve the same purpose—using corn starch to thicken a sauce instead of flour, for example, or swapping a gluten-free flour mix in your morning pancake recipe.

To be honest, more complicated baked goods like cakes and breads or pastries like pies and tarts are trickier to bake gluten-free. There’s definitely a learning curve when going gluten-free, so here is our best advice:

  • Find a good gluten-free recipe and follow it to the letter. Once you’ve made something GF, you’ll have a better sense of how to adapt your personal recipes.
  • Gluten-free batter is almost always more wet than traditional batters, and gluten-free baked goods are almost always more dry. The more you practice, the more you’ll adjust to this new reality and tweak recipes and baking times accordingly.
  • Never try to make a wheat bread recipe gluten-free. It just won’t work. Too much of wheat bread baking revolves around the role of gluten. Instead, learn to bake really good gluten-free bread.
  • Be patient and have fun! The more you bake gluten-free, the more comfortable you’ll be. You might even enjoy exploring the wide world of gluten-free grains, which offer a huge variety of flavors, textures and recipes.

How Does Gluten-Free Baking Change Recipes?

Gluten’s role in traditional baked goods is hard to understate. Breads are kneaded and shaped in order to best activate and strengthen gluten. Pizzas are stretched and flung to work the gluten. Cakes are lightly stirred in fear of awakening too much gluten.

So, naturally, gluten-free baking is going to be different, in good ways and bad. First, there’s no fear of making any baked good tough. So go ahead and beat that cake batter, re-roll that pie dough and enjoy stirring up a bread dough in a stand mixer without breaking a sweat.

The downside? No gluten means less structure, less strength, less height, less stretch. To make up for this, most gluten-free baking recipes call for a binding agent that plays a similar role to gluten. Xantham gum, guar gum and psyllium husk are common binders, either added to the recipe or simply included in your flour mix. These binders make it possible to bake gluten-free bread that’s actually chewy and to achieve the loftiness of a fancy cake.

There are a ton of gluten-free flours out there, from boxed mixes to individual grains sourced from around the world. Here’s a quick guide to get you started.

The Best Gluten-Free Flours

All-Purpose Mixes

Many bakers like to use an all-purpose mix, which includes a blend of flours and starches that mimic the taste and texture of all-purpose wheat flour. Store-bought mixes are convenient and generally designed to replace standard all-purpose flour one-to-one. We like King Arthur Gluten-Free Measure for Measure Flour, which is highly rated for taste and texture and sold at a reasonable price point. Better Batter Original All Purpose Flour Blend won our top marks for most allergy-friendly mix.

Single Flours

For gluten-free baking, we like brown and white rice flours, which are versatile and mild-flavored. Brown rice has a heartier texture that works well in pancakes and muffins, while white rice is lighter and best for cakes. Millet flour has a warm, pleasant flavor, and oat flour is slightly sweet. Sorghum and corn flours lean more savory, but they are still quite mild and add a pleasant chew to breads, muffins and pizza crust.

How to Measure Gluten-Free Flour

The best way to measure flour is to fluff the flour so it’s not too packed, gently spoon flour into a measuring cup and swipe across with the flat side of a knife to level it off. Don’t dip your measuring cup directly in the bag, as that will pack the flour down and serve up a too-heavy scoop. Pouring the flour into the cup also results in overly packed flour, as well as a possible countertop mess.

How to Make Your Own Gluten-Free Flour

Making a homemade flour mix will save you money if you bake often, and it’s quite easy to do. Simply whisk together 2 cups white rice flour, 2/3 cup potato starch flour and 1/3 cup tapioca flour. Scale up the recipe if you bake often. Store in an airtight container in a cool, dry place.

How to Store Gluten-Free Baked Goods

The sad truth is that gluten-free baked goods don’t keep quite as well as traditional treats. But it’s not the worst fate! Generally, this only means you should eat them quickly.

As a rule of thumb, the more moist the bake, the longer it will keep. Scones and delicate cookies will last a day or two, while richer treats, like peanut butter cookies or breads, will keep a few days. Very moist bakes, like quick breads and muffins, will keep for several days.

Anything frosted with dairy ingredients should be kept in the fridge. Everything else keeps best at room temperature, wrapped tightly in an airtight container or a resealable plastic bag. Bread boxes and cookie jars are going to make things dry very quickly.

Afraid a bake will go stale? Freeze it! Almost anything can be frozen for one or two months, and it will taste nearly as good as when it was fresh. Muffins and unfrosted cupcakes, cookies, scones, quick breads (sliced or whole), unfrosted cake layers, breads, bagels and more can be frozen. Allow the baked goods to cool completely, then wrap tightly in at least two layers. Defrost overnight in the refrigerator, or heat in the microwave and eat immediately.

What’s better than homemade shortbread? The million-dollar version of shortbread: millionaire bars. They’re topped with scratch-made caramel, chocolate ganache and flaky sea salt.

Why Are They Called Millionaire Bars?

While the name is up for debate, there are a few theories about why these bars are called millionaire shortbread or millionaire bars.

The best guess is that the rich flavor of these bars begs for them to have a similarly rich name. That’s where the term millionaire comes in.

Another thought is that the ingredients needed to make these multilayered cookies can cost a pretty penny—especially if you’re buying the best butter, best chocolate and top-of-the-line flaky salt like Maldon.

How to Make Millionaire Shortbread Bars

Before you start these bars, have parchment paper and a candy thermometer on hand. Plan to allow enough time to let the cookie dough chill before baking, and for all of the ingredients to set before you cut the bars.

Ingredients

  • 1 cup unsalted butter, softened
  • 1/3 cup sugar
  • 1-1/2 teaspoons vanilla extract
  • 1 large egg yolk
  • 3 cups all-purpose flour
  • 1/2 teaspoon salt

Filling:

  • 1 can (14 ounces) sweetened condensed milk
  • 1 cup packed brown sugar
  • 3/4 cup unsalted butter, cubed
  • 1/4 cup light corn syrup
  • 1 teaspoon vanilla extract
  • 1/4 teaspoon salt

Topping:

  • 1-1/2 cups 60% cacao bittersweet chocolate baking chips
  • 2/3 cup heavy whipping cream
  • Flaked sea salt, optional

Tools

  • 13×9-inch pan: This recipe makes a big batch of bars. Make sure you have a 13×9-inch pan on hand.
  • Candy thermometer: Making the caramel for this recipe requires precise temperature monitoring. Use a candy thermometer or an instant-read thermometer.
  • Flaky sea salt: Part of the appeal of these bars is the sweet-and-salty combo. Maldon makes large, thin flakes of salt that look beautiful and melt in your mouth.

In a large bowl, cream butter, sugar and vanilla until light and fluffy, 5 to 7 minutes. Yep, it does take that long to properly blend these ingredients. Then beat in the egg yolk.

Step 2: Combine wet and dry ingredients

In another bowl, whisk flour and salt. Gradually mix the dry ingredients into the wet ingredients. Don’t overmix the dough, as you want the shortbread to be super tender.

Step 3: Press the shortbread into the pan

Line a 13×9-inch pan with parchment paper. Be sure to use enough parchment so the paper extends up and over the edge of the pan.

Then spread the dough into the pan. You can use a measuring cup to help flatten the cookie dough into an even layer. Know that the dough will be sticky. Once you’re done, chill in the fridge for 30 minutes.

Bake at 350ºF until edges are lightly browned and center is dry, 20 to 25 minutes. Cool completely on a wire rack.

Meanwhile, in a large heavy saucepan, combine all the caramel filling ingredients. Bring to a boil over medium heat, stirring occasionally.

Reduce heat to maintain a low boil; cook and stir until the mixture is amber-colored and reaches 225°F. This is where that candy thermometer comes in handy! Be patient—this will take 20-25 minutes.

Remove the caramel from the heat, and quickly pour over the cooled crust. Let cool for 15 minutes and refrigerate until chilled, about an hour.

Place chocolate in a small bowl. In a small saucepan, bring cream just to a boil. Pour over chocolate and let stand 5 minutes. Stir with a whisk until smooth. Pour over the caramel layer. If desired, sprinkle with sea salt. Refrigerate until set, at least 2 hours.

Why did my meringue shells crack?

Cracked cookies can happen for a few reasons. One common occurrence that will cause your shells to crack is not mixing the batter enough, or inversely, overmixing it. Overmixing will deflate your egg whites, resulting in hollow cookies and easily cracked tops, while not mixing enough will result in chunks of egg whites expanding, which also causes cracks. Your batter should be uniform, without large bits of white left visible. Another reason why the macaron shells may crack is not letting them rest before baking. You'll know the cookies are ready to bake when the top is no longer wet, but just slightly tacky. The drying process allows a skin to form, so the expanding air puffs up the cookie instead of cracking it. If the macaron shells crack after baking, you may have taken them off the baking sheet too soon. Be sure to let them cool on the sheet before moving them. How can I make lemon macarons my own?

The traditional filling for macarons is buttercream, but we used buttercream and lemon curd in our cookies. We did something similar with our strawberry macaron recipe. You could also choose a jam in a flavor that complements lemon, like blueberry or raspberry.

How should I store lemon macarons?

Store lemon macarons in an airtight container, with parchment between the layers. Because of the buttercream filling, macarons should be kept in the refrigerator. These cookies are best enjoyed at room temperature, so take them out of the fridge about 30 minutes before you plan to eat. You can also freeze macarons, but you should thaw them gradually to prevent them from getting soggy. Put them in the refrigerator to thaw overnight, then let them come to room temperature before serving.

  • 12 thick-sliced bacon strips
  • 1 package (1/4 ounce) active dry yeast
  • 1-1/2 cups warm water (110° to 115°)
  • 2 tablespoons sugar
  • 2 tablespoons butter, melted
  • 1-1/2 teaspoons salt
  • 4 to 4-1/2 cups all-purpose flour
  • 1/3 cup baking soda
  • 1 large egg yolk
  • 1 tablespoon cold water
  • 1 teaspoon coarse salt
  • 1/4 cup butter, melted
  • 6 wooden skewers

Directions

  1. In a large skillet, cook bacon over medium heat until partially cooked but not crisp. Remove to paper towels to drain; set aside.
  2. In a large bowl, dissolve yeast in warm water. Add sugar, butter, salt and 2 cups flour. Beat until smooth. Stir in enough remaining flour to form a soft dough (dough will be sticky).
  3. Turn dough onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease top. Cover and let rise in a warm place until doubled, about 1 hour.
  4. Preheat oven to 425°. In a Dutch oven, bring 8 cups water and baking soda to a boil. Punch dough down; divide into 6 portions. Roll each portion into a 32-in. rope. Fold each rope in half, creating an upside-down V shape. Place 1 bacon strip over the top of each "V"; braid dough around the bacon, layering in a second bacon strip halfway. Pinch ends to seal; tuck under. Add to boiling water, 1 at a time; cook 30 seconds. Remove with 2 slotted spoons; drain on paper towels.

Let macarons rest until no longer wet or sticky to the touch, 30-60 minutes. Bake, 1 tray at a time, until cookies rise about 1/8 in. to form "feet," 14-16 minutes, rotating tray halfway through baking. Remove tray and let macarons cool completely; repeat with remaining trays. Once macarons have cooled completely, remove from parchment.
  5. To make filling, cream butter in a stand mixer fitted with whisk attachment; slowly add confectioners' sugar until incorporated. Beat in strawberry powder. Add heavy cream, vanilla, salt and, if desired, enough food coloring to achieve desired color; mix until smooth. Pour frosting into a pastry bag fitted with a small round tip; pipe a circle of buttercream onto the bottoms of half the macarons. Place 1/4 teaspoon strawberry jam in center of each frosting circle. While many home bakers originally hopped onto the sourdough trend during the pandemic, we’re happy to report that many enthused cooks are continuing to hone their bread-baking craft. One of the best ways to level up your home baking game is to invest in the right equipment for the job.

In the case of certain types of breads like boules (a crusty French bread), this means a bench scraper, a sharp lame and a proper banneton basket. If you’re unfamiliar with banneton baskets, consider this your quick guide to every pro baker’s favorite tool.

What Is a Banneton Basket?

A banneton basket is basically a container for proofing homemade bread. Also known as “proofing baskets” or “brotforms,” they are designed to hold the shape of the dough as it proofs, yielding a perfectly symmetrical boule. They are typically made of strong, splinter-proof rattan wrapped in a circular coil, which creates that beautiful spiral line design on the top of the boule. Circular bannetons often range in size from 8 to 12 inches in diameter, and you can also find the baskets in oblong or oval varieties to create differently shaped loaves.

How Do I Use a Banneton Basket?

Using a banneton is very simple. For best results, sprinkle the banneton generously with rice flour; if you don’t have rice flour, bread or all-purpose flour will work too. Then, once you’ve shaped your boule, simply place it upside-down (seam-side-up) in the banneton for its long proof—usually an overnight fermentation in the refrigerator.

When you’re ready to bake the next morning, just overturn the banneton basket over some parchment paper so the dough plops onto the paper. Then, use the paper as a “sling” to hoist the dough into a Dutch Oven to bake. You could also place the dough onto a baking sheet, but without a lid, you won’t get as strong of a rise, and the dough is more likely to spread in the oven, undoing much of the banneton’s shaping work.

What Can I Use Instead of a Banneton Basket if I Don’t Have One?

If you don’t have a banneton basket, fear not! You can easily use a basic glass or plastic bowl. For best results, try to find a bowl that is almost as tall as it is wide. This will help the dough holds its round shape as it fights against gravity. Since a normal bowl does not have the flour-holding ridges of a banneton basket, be sure to lightly grease the bowl with cooking spray or olive oil before placing the dough into it, so that it releases effectively. (If you try to flour the bowl, all the flour will just fall off the sides to the bottom.) Then, proof, release and bake the dough as above.

  • 1 cup sugar
  • 1 cup canola oil
  • 1 cup honey
  • 3 large eggs
  • 1/2 cup orange juice
  • 1 teaspoon vanilla extract
  • 3-1/2 cups all-purpose flour
  • 1 teaspoon baking powder
  • 1 teaspoon baking soda
  • 1/2 teaspoon salt
  • 1 cup fresh or frozen raspberries
  • 1 cup fresh or frozen blueberries
  • GLAZE:
  • 1 cup confectioners' sugar
  • 2 tablespoons honey
  • 2 tablespoons 2% milk

Directions

  1. Preheat oven to 350°. Grease a 13x9-in. baking pan. In a large bowl, beat sugar, oil, honey, eggs, orange juice and vanilla until well blended. In another bowl, whisk flour, baking powder, baking soda and salt; gradually beat into sugar mixture.
  2. Transfer to prepared pan. Bake for 15 minutes. Sprinkle top of cake with raspberries and blueberries. Bake until a toothpick inserted in center comes out clean, 30-35 minutes longer. Cool completely in pan on a wire rack.
  3. Combine glaze ingredients; drizzle over cake. Serve with additional berries if desired.

  • 1 package (1/4 ounce) active dry yeast
  • 1/4 cup warm water (110° to 115°)
  • 1 cup warm 2% milk (110° to 115°)
  • 1/2 cup sugar
  • 3 large eggs, room temperature
  • 1/2 cup butter, softened
  • 2 teaspoons grated orange zest
  • 1/2 teaspoon salt
  • 3/4 teaspoon ground mahleb, optional
  • 1/8 teaspoon ground mastic, optional
  • 5-1/2 to 6 cups all-purpose flour
  • 6 hard-boiled large eggs, dyed red
  • GARNISH:
  • 1 large egg, lightly beaten
  • 1/2 cup sliced almonds

Directions

  1. In a large bowl, dissolve yeast in warm water. Add the milk, sugar, eggs, butter, orange zest, salt, mahleb and mastic if desired and 3 cups flour; beat until smooth. Stir in enough remaining flour to form a soft dough.
  2. Turn onto a floured surface; knead until smooth and elastic, 6-8 minutes. Place in a greased bowl, turning once to grease the top. Cover and let rise in a warm place until doubled, about 1 hour.
  3. Punch dough down. Turn onto a lightly floured surface; divide dough into six portions. Shape each into a 12-in. rope. Place three ropes on a greased baking sheet and braid; pinch ends to seal and tuck under. Repeat with remaining ropes. Tuck three hard-cooked eggs into the braid of each loaf. Cover and let rise until doubled, about 45 minutes.
  4. Brush with egg; sprinkle with almonds. Bake at 350° for 25-30 minutes or until golden brown. Cool on wire racks.

Directions

  1. Preheat oven to 350°. In a small bowl, dissolve espresso powder in hot water; cool slightly. In a large bowl, cream butter and sugars until light and fluffy, 5-7 minutes. Beat in eggs, then cooled espresso mixture, chocolate syrup, zest, orange extract, coffee liqueur and extract if desired, and vanilla (mixture will look curdled). In another bowl, whisk flour, baking cocoa, baking powder, cinnamon, baking soda, allspice and salt; gradually beat into creamed mixture. Stir in walnuts and chocolate chips. Refrigerate 30 minutes or until firm enough to roll.
  2. Shape dough into 1-in. balls; place 2 in. apart on parchment-lined baking sheets. Bake until firm, 10-12 minutes.
  3. Meanwhile, for glaze, in a large bowl, mix confectioners’ sugar, zest and enough juice to reach a dipping consistency. Remove cookies from oven. Immediately dip cookies into glaze; allow excess to drip off. Place on wire racks; let stand until set. Drizzle cookies with remaining glaze; let stand until set. Store between pieces of waxed paper in airtight containers.
