Ingredients

  • 1 cup frozen unsweetened strawberries, thawed
  • 2 berry-flavored green tea bags
  • 1 cup boiling water
  • 1-1/2 cups coconut milk, chilled
  • 2 tablespoons simple syrup
  • 2 cups ice cubes
  • 1/4 cup freeze-dried strawberries, slightly crushed

Directions

  1. In a saucepan, cook strawberries over low heat until they start to break apart, about 15 minutes, stirring occasionally. Remove from heat; cool. Using an immersion blender, puree strawberries. Chill, covered, until ready to serve.
  2. Steep tea 5 minutes in boiling water; discard tea bags. Stir in strawberry mixture, coconut milk and simple syrup. Divide mixture between 2 glasses filled with ice. Garnish with freeze-dried strawberries.
