Pesto salmon is a simple yet flavorful dish to turn to when you’ve got pesto on hand. Simply spread pesto on top of the fish before popping it into the oven, and voila! You have a two-ingredient entree that couldn’t be easier to prepare.

I’m always on the lookout for quick, healthy weeknight dinners—especially ones with a lot of protein. There are lots of healthy dinner recipes to choose from, but easy salmon recipes are a go-to for me since salmon packs almost 40 grams of protein per 6-ounce serving.

Here’s everything you need to know about making baked pesto salmon.

Baked Pesto Salmon Recipe

This recipe from the Taste of Home Test Kitchen serves four and takes 20 minutes from start to finish.

Ingredients

Salmon and Pesto

  • 4 salmon fillets (6 ounces each)
  • 1/2 cup prepared pesto

Directions

Step 1: Prepare the baking sheet

Preheat the oven to 400°F. While it preheats, arrange the salmon fillets evenly on a greased rimmed baking sheet.

Bake until the fillets just begin to flake easily with a fork, 12 to 15 minutes. Let the fish rest for a few minutes before serving.

How to Tell When Pesto Salmon Is Done

Take the pesto salmon out of the oven when the fillets flake easily with a fork. The internal temperature should reach 145° before you dig in. However, fish will continue to cook a bit with the residual heat from the pan even after you pull it out of the oven. Consider pulling the fish from the oven when it reaches somewhere between 125° and 135°, then letting it rest until it reaches 145°.

Tips for Making Pesto Salmon

What type of salmon fillets should you use?

While you can use skinless salmon fillets, skin-on is a great choice for baked fish. The skin acts as a barrier between the hot pan and the delicate fillet. Beyond that, it’s up to you whether you choose wild or farmed salmon at the grocery store. If you want more guidance on how to choose between the two, here are more tips on how to buy salmon.

If you pick up fresh salmon fillets, cook or freeze them within one to two days. You can also use frozen salmon fillets for this pesto salmon recipe. You’ll need to pop the fish in the oven for a few minutes before you spread on the pesto and continue baking; otherwise, the pesto will slide right off the frozen fish in the oven.

Regardless of whether you cook fresh or frozen salmon, try to make sure that each fillet is about the same thickness so that it cooks evenly.

Can you use frozen salmon for air-fryer salmon?

You can cook frozen salmon in the air fryer without thawing it. Frozen salmon takes longer to cook, though, so the timing depends on the size of the fish fillets and your air fryer. Try checking the salmon at the high end of the suggested cooking time, and consider adding a few minutes on top of that. We suggest skin-on fillets regardless of whether the salmon is fresh or frozen. The salmon skin protects the fish from overcooking, and you can easily remove it after if you don’t want to eat the skin. Of course, you can always remove skin from salmon before cooking the fillet, if you prefer.

How can you tell when the salmon is done cooking?

The best way to determine when salmon is done cooking is with an instant-read thermometer. The internal temperature of the thickest part of the salmon should reach 145°. If you don’t have a thermometer, look for the flesh to turn opaque and flake apart easily when tested with a fork. This recipe doesn’t require you to flip the salmon, so you won’t have to worry about it falling apart as you turn. However, it’s important to make sure that all four fillets fit in the basket without overcrowding so the fish cooks properly.

You can use dark, milk and white chocolates to create beautiful and delicious combinations. Step 2: Melt the chocolate

When the raspberries are frozen, melt the chocolate. You can do this in the microwave or over the stovetop using a double-boiler method. Just be sure to stir consistently so that the chocolate doesn’t scorch.

Step 3: Coat the raspberry discs

Dip the frozen raspberry discs into the melted chocolate, turning them to coat. You may need to remelt the chocolate a few times. Place the coated raspberry-chocolate snacks back on the parchment-covered baking sheet.

Step 4: Pop ’em in the freezer

Chill the raspberry-chocolate snacks in the freezer until the chocolate is hardened, 15 to 30 minutes.

Step 5: Top them with more melted chocolate

Finally, if desired, drizzle a different color of melted chocolate over the raspberry-chocolate snacks to embellish them. Let harden on the cold chocolate.

How to Make Air Fryer Chicken Fajita Bread Roll Sliders

To start, you’ll need a solid chicken fajita recipe to fill your sliders with. I’ve adapted this contest-winning, test-kitchen-approved version, which gets its complex flavors from lime juice, garlic, chili powder and cumin. Better yet, it can be made quickly in a skillet so that you can load up your chicken fajita sliders ASAP.

Ingredients

  • 1/4 cup lime juice
  • 1 garlic clove, minced
  • 1 teaspoon chili powder
  • 1/2 teaspoon salt
  • 1/2 teaspoon ground cumin
  • 1/2 teaspoon Mexican oregano
  • 2 tablespoons olive oil, divided
  • 1 1/2 pounds boneless, skinless chicken breast, cut into bite-sized pieces
  • 1 medium onion, sliced
  • 1/2 medium red bell pepper, sliced
  • 1/2 medium yellow bell pepper, sliced
  • 1/2 medium green bell pepper, sliced
  • 12 small bread rolls (we’re loving these rolls from Aldi!)
  • 1 1/2 cups shredded Monterey jack cheese (or mozzarella, as Ashlea uses)
  • Toppings of choice, such as salsa, sour cream, guacamole or cilantro

Directions

To make the chicken fajita sliders, you’ll need a skillet, a baking sheet and an oven or air fryer. Ashlea makes hers in an air fryer for ease, but if you don’t yet have one, your oven will yield an equally delicious meal.

Step 1: Prep the chicken fajitas

To start, combine the lime juice, garlic, chili powder, salt, cumin, oregano and one tablespoon of olive oil in a large bowl. Mix to combine, then add the chicken pieces. Toss to coat and let marinate for 15 minutes.

Step 2: Preheat the air fryer or oven

In the video, Ashlea turns her air fryer to 180 degrees Celsius. For us Americans, turn your air fryer or oven to 350 degrees Fahrenheit.

Step 3: Cook the fajita veggies

As the chicken finishes marinating, add the remaining 1 tablespoon of olive oil to a large skillet over medium heat. Once preheated, add the onion and bell peppers, season with a pinch of salt and cook until crisp-tender, about 4 minutes. Some char is nice for flavor.

Step 4: Cook the chicken fajitas

Remove the fajita veggies to a plate, then add the seasoned chicken fajita mixture to the same pan. Sauté until no longer pink inside, about 4 minutes. Turn off the heat and add the fajita veggies back into the pan.

Step 5: Prep the sliders

Cut the tops off the bread rolls and dig out to the middle to make a small bread boat. Sprinkle half of the cheese into the bottom of the roll, then fill most of the way with the chicken fajita mixture. Top with the remaining cheese.

Step 6: Bake the chicken fajita sliders

Bake the chicken fajitas sliders for about 8 minutes, or until the cheese is melted and slightly browned and the bread is warm.

Step 7: Serve!

To serve the chicken fajita sliders, Ashlea adds chips (french fries) and a sauce made of one part chili sauce to one part mayonnaise. For a more cohesive flavor profile, I’d suggest serving the fajita bread sliders with salsa, sour cream, guacamole and cilantro. Then add a basic side salad to round out your nutrients. Bon appétit!

  • 3 tablespoons soy sauce

  • 1 teaspoon minced garlic
  • 1/4 teaspoon salt

  • 1 cup fresh broccoli florets

Directions

  1. Discard ramen noodle seasoning packets or save for another use. Cook noodles according to package directions.

Can you use a different type of oil to stir-fry?

You bet! Sesame oil imparts a distinctive nutty flavor, but you can use other oils for frying, like peanut oil, canola oil or regular vegetable oil. You may wish to steer away from olive oil, which could impart its own flavor to the dish.

Can you use frozen stir-fry vegetables instead of fresh?

Of course you can! Feel free to substitute about 3 cups of your favorite stir-fry veggie blend and adjust the cook time accordingly. Besides being just as healthy as fresh, frozen veggies will cook a bit faster than fresh raw veggies. You can even freeze your own vegetables and fruits for thrifty meals later.

What else can you put in ramen stir-fry?

Add your favorite protein, such as shredded cooked chicken or pork, sliced beef steak, crumbled cooked ground beef or cubed drained tofu (here’s all you need to know about how to prepare tofu). Another favorite is scrambled eggs: Beat 2 eggs and 2 tablespoons of water, then cook in a thin layer in a large skillet in a bit of oil (preferably sesame).
